Aquafaba Cocktail for Tales of the Cocktail

During the summer I became a bit obsessed with aquafaba (the liquid left over after cooking chickpeas, or opening a can) which has the same properties as egg whites. I wondered if anyone was replacing egg-whites with it, for cocktails. Lo and behold Keith Corwin of Berlin Cocktails, who bartends at Thelonious bar in Neukölln was using it for his vegan whiskey sour. So we shot a how-to for Tales of the Cocktail – here.
